Loon Liquors Aims To Open Before DJJD; Set to Close Current Location on Friday

Co-owner of Loon Liquors, Mark Schiller, shared the news that many people have been eagerly awaiting: when the distillery was set to open its new location downtown. Last week, KYMN had the opportunity to talk with Schiller and Simeon Rossi about an update on the project and visit their building, which is rapidly under construction. The two noted that since the building sale closed in March, it has been a busy time to prepare for the new location.

As they prepare for moving to the new location, their current location at Armstrong Road will close this week, with the last day open to the public on Friday. During that time, they are set to train several new employees and begin the move downtown.

The new location will include an expanded cocktail room, a pizza lounge with the dough made on site, and an explorers room for tours. However, both agreed on one improvement that was significantly different from their current location: 

“1000% is the amount of natural light in there… And now with this 56 foot skylight right in the middle of it. So much natural light, the front windows. And then that huge window they put in.”

Among the biggest changes is adding Pizza to their menu. In the design of the building, the pizza lounge will be a separate room from the cocktail room, providing a separate space for people: 

“So we’ll be milling this flower and then using it in our handcrafted pizzas. So we’ll be bringing in a brick pizza oven. ohh, we’re so excited.” – Simeon Rossi, Co-owner of Loon Liquors, KYMN News Interview

While the new location will expand Loon’s footprint in Northfield, it also enables the company to expand its distilling operations significantly. Rossi noted they will now have a dedicated workspace that is bigger, but also because they are bringing in new equipment.

As Loon gets ready to make the move between locations, Schiller and Rossi stated that they will share any opening timeline on their social media and asked for grace during the move: 

“So just understand where we’re coming from and that, you know, give a little bit of grace, but we’re gonna do our best to fulfill it. So keep your expectations high, but don’t put them into an unfathomable realm.” – Mark Schiller, Co-owner of Loon Liquors, KYMN News Interview
